The USDA recommends that saturated fat make up no more than 7 percent of total calories, yet average intake in America is 11 percent to 12 percent of total calories. Cheese is the leading source of saturated fat in American diets. Despite the fact that we consume too much saturated fat, Dairy Management, Inc., a government-funded program, aggressively markets cheese, and specifically high-fat cheese since, as the group acknowledges, it sells better than reduced-fat cheese. Your tax dollars, as a result of dairy industry influence, are helping to fund our obesity crisis and drive up health care costs. Studies show that decreasing the amount of animal fat in the diet may have numerous health benefits.
